Nania’s and Friends Fermentation Festival Saturday 11th July 2026
Join us on our allotment vineyard in Montpelier, Central Bristol for a full day of fermentation, food, and conversation. This is a unique opportunity to learn from four expert fermenters in a relaxed, hands-on setting, with plenty of time for questions, tasting, and good company.

Your Host
James Bayliss-Smith, Head Brewer and founder of Nania’s Wildbrew Kombucha, will host the day and lead the kombucha workshop alongside three specialist guests.
Schedule
- 10:00 – 10:30 Arrival, welcome ferment, vineyard tour
- 10:30 – 12:30 Session one (two parallel workshops, groups split)
- 12:30 – 14:00 Lunch: sourdough pizza cooked in our cob oven
- 14:00 – 16:00 Session two (groups swap)
- 16:00 – 17:00 Wrap-up: open Q&A, discussion, tasting
The Workshops
Kombucha and Kefir: Fermenting Drinks at Home
James Bayliss-Smith from Nania’s Wildbrew will run a kombucha-making workshop covering everything from properly brewing tea to successfully fermenting at home. James will share the secrets behind Nania’s barrel fermentation process and send every participant home with a kombucha mother culture to get started straight away.
Dr Caroline Gilmartin from Every Good Thing will cover all things kefir, demonstrating how straightforward it is to make this wonderfully healthy ferment at home.

Lacto-Fermentation and Hot Sauce: Fire and Funk
Rikki from Easton Chilli and Matt (aka Muti) from Muti will cover the full world of lacto-fermentation: sauerkraut, kimchi, and hot sauce. Both will demonstrate how easy it is to make these ferments at home and send you away with your own creations made on the day.
